Roasted Tomatillo Salsa Recipe

Being an Austin-based company, we probably eat quite a lot of Mexican food on a regular basis. It comes as no surprise that we’re constantly perfecting our own recipes at home, including the salsas. By now, you’ve probably seen how our Zip Top cups are great for prepping smoothies with an immersion blender, but did you know this same idea can be applied to salsas?! That’s right, with the help of an immersion blender, you can make homemade salsas that taste just like your favorite local Mexican restaurant!


A crowd favorite – the roasted tomatillo salsa is not only delicious but super easy to make from scratch. It’s fresh, tangy and a bit spicy, and goes over tacos, eggs or simply with tortilla chips. Extra brownie points if you make it directly in a Zip Top cup or dish so it can conveniently travel to your next social gathering, pool day or picnic!

Ingredients:

1lb tomatillos, husked and rinsed
½ white onion, chopped
2-4 serrano peppers, stemmed or whole (depending on preferred heat level)
½  cup cilantro stems and leaves, chopped
Salt to taste
½ tablespoons fresh lime juice

 

Directions:

  1. Preheat the broiler and adjust your rack so it’s at its highest setting. Cover a baking sheet with foil and place your tomatillos and peppers on top. Broil for 5 minutes, until charred on one side, then turn and broil for an additional 5 minutes. Remove from the oven.
  2. Transfer the tomatillos, peppers and any of the juices from the baking pan in a large Zip Top cup. Add the chopped cilantro, onion and lime juice and blend the ingredients with an immersion blender. Season to taste. To thin out the consistency of the salsa, you can add some water to reach the desired consistency.
  3. Serve with crispy tortilla chips or over your favorite Mexican dish.
